Seit 1531 wird in Maison Vergnes Schaumwein nach der klassischen Methode hergestellt, eine Tradition, die bis heute unter der Leitung von Mas von Familie zu Familie weitergegeben wird. Die \u00e4ltesten Mauzac-Rebst\u00f6cke der Domaine (\u00fcber 35 Jahre alt) sind f\u00fcr die Herstellung des Ancestrale reserviert. Die Trauben, die als letzte geerntet werden, m\u00fcssen gesund sein und eine hohe Zuckerkonzentration aufweisen. Bei der Ancestrale-Methode wird die G\u00e4rung zun\u00e4chst verlangsamt und dann gestoppt, wobei ein ausreichender Zuckergehalt erhalten bleibt, damit die G\u00e4rung nach der Abf\u00fcllung ohne weitere Zugabe von Zucker und Hefen fortgesetzt werden kann. Die Enzyme und Hefen, die in der Flasche eingeschlossen sind, hemmen das CO2, wodurch, wie die Franzosen sagen, ein leicht prickelnder \"Petillant\" entsteht. Eine sehr alte Technik, die ihren Ursprung im Aoc Blanquette de Limoux in Frankreich hat. Normalerweise sind diese Weine, die nicht degorgiert werden, tr\u00fcbe und haben aufgrund des h\u00f6heren Hefeanteils ausgepr\u00e4gtere Brotkrustenaromen.<\/p>","protected":false},"excerpt":{"rendered":"
