Champagne La Closerie Extra Brut N.V. was produced by J\u00e8rome Pr\u00e8vost, one of the most sought-after artisan winemakers in Champagne's elite, the pupil of Asselme Selosse. J\u00e8rome Pr\u00e8vost is one of the very few producers to make Champagne from Pinot Meunier alone. Fermentation takes place with indigenous yeasts in oak barrels followed by maturation on the lees for at least 24 months.
