Alipús began in 1999 as a project of Destilería Los Danzantes, with Don Joel Antonio and sons as the first producers, in San Juan del Río. It was born with the idea of creating a map of Oaxaca's mezcals, showing how the conditions in which each mezcal is produced - and thus distinct soils, waters and climates - affect the final product. Alipús seeks to promote and develop awareness of traditional mezcal producers in Oaxaca, particularly their knowledge and high-quality products. Current distribution and branding efforts have led to superlative reviews and increased economic development for traditional mezcal farmers, where previously there was very little.
