The wines of Tenute Capovaccaio are born in the marvellous landscape of the Canale di Pirro on the outskirts of Alberobello, 'watched over' by hawks and eagles that Francesco Pezzolla lets soar free every morning. Francesco, founder of the farm, born in 1976 was born and lives in Alberobello, a Unesco heritage town, famous worldwide for its trulli but also for its name, which derives from the Latin "Silva Arboris Belli", "Forest of the tree of war", referring to the times when the area was covered by a lush blanket of woods. And it was in the woods still surrounding Alberobello that Francesco Pezzolla's passion for hawks was born. The philosophy of Tenuta Capovaccaio is to create high quality wines that reflect the spirit of falconry, a discipline that requires knowledge, dedication and great attention to every detail. Only high quality grapes from the estate's own vineyards in the Puglia dei Trulli are used, practising sustainable cultivation techniques to protect the surrounding natural environment.
Description
Like every bottle from the Capovaccaio estates, the names are derived from falcons, the passion and inspiration of founder Francesco Pezzolla. The Albidus is a goshawk with a slender but vigorous figure, candid, of rare elegance, a faithful manifestation of a fresh wine from pure Verdeca.
Organoleptic characteristics:
Greenish yellow colour. Fascinating scents of pear, apple and ripe apricots, followed by notes of vanilla, thyme and wild mint. On the palate long, elegant and balanced with salty notes

De-stemming - Soft pressing - Fermentation with selected yeasts at a temperature of 16°-17°C
