Cellar
The heart of Schola Sarmenti is an old winery built in the mid-19th century and closed for over fifty years. The Marra and Calabrese families have thus restored to splendour an ancient symbol of Salento oenology, the fulcrum of an important architectural tradition, in which culture and territory are transmitted to the visitor through the impetuous beauty of the star-shaped vaults made of tuff and Lecce stone ashlars.
The embrace between the present and the past finds its maximum expression in the unique details, capable of truly moving. As you slowly descend a small central staircase, your heart is pervaded by an intense perfume, while your legs yearn to hurry up, eager to discover that underground world.
The last step and you are finally immersed in wine.
A barrique cellar made from old cisterns, one after the other. The right temperature and constant humidity all year round make it a perfect environment where the barrels store that wine which, once in the bottle, will end up resting between purple-red walls.
A place in which to breathe the air of a distant past, while the scents of wine and wood give a foretaste of the result of this slow rest: the near future.
