Description
Badia a Passignano Gran Selezione is produced exclusively with the selection of the best Sangiovese grapes coming from the homonymous estate located in the heart of Chianti Classico. The area is renowned for the production of wine since the year 1000. Vineyards are located in a soil rich in calcareous rock with an average amount of clay at an altitude of about 300 meters above sea level. The aging process takes place in the historical cellars of Badia di Passignano dated back to the tenth century.
Organoleptic characteristics:
Badia a Passignano shows a ruby red color. The nose is striking for its intensity: notes of ripe red berries, cherries in alcohol and black cherry, combine with delicate balsamic sensations and aromatic herbs. The bouquet is completed by spicy hints of cloves and chocolate. On the palate the entry is rich, with well integrated tannins and supported by an excellent crispness and sapidity.
Storage time:
3-10 years old
Vinification
Destemming and soft crushing.
Alcoholic fermentation in about 10 days, maceration with skins for further 10-12 days. Malolactic fermentation in stainless steel tanks.
