Description
Made from 90 % Gamay and 10% Pinot Noir, produced in the ancient underground quarries near Bailly in the Auxerre region of France, a few kilometres south-west of the village of Chablis.
Pinot Noir gives structure and longevity while Gamay brings fullness, pliability and elegance
Organoleptic characteristics:
Straw-yellow colour held with beautiful brilliance. Creamy, fine and persistent bubble. Citrus notes and hints of yeast and bread crust are evident on the nose. Light-bodied, fresh, fairly delicate, high acidity, balanced with good taste-olfactory persistence.
