In the heart of the Touraine region, in the Mesland district, we find the Domaine des grandes Esperances. It is committed to organic viticulture, now certified by Ecocert. Its wines are generous, full of fun, charm and promise... that's right, they are 'grandes espérances' (great expectations). Great wealth is certainly the mix of grape varieties he cultivates. With around 8 different varieties planted on 24 hectares, the Domaine boasts an excellent reserve of raw materials from which it can continuously create and adapt its wines depending on the vintage. Since 2019, it has officially obtained organic certification, although natural practices were already practised before to obtain a superior quality product.
Description
L'Etoile Filante is a natural sparkling wine produced by ancestral fermentation. The Chenin Blanc grapes are cultivated on clay soil and harvested at optimal ripeness. A lively wine with which to accompany aperitifs and hors d'oeuvres.
Organoleptic characteristics:
Straw yellow colour with lively mousse. On the nose it first reveals notes of green apple, hinting at a nice freshness given by hints of herbs and wild flowers. On the palate it has excellent freshness and its slight dosage gives it a pleasant smoothness.
Storage time:
2-3 years
Vinification
The must is bottled during the fermentation phase. The yeasts then consume the last of the natural sugars, releasing the gas that will give the desired soft, light effervescence.
