The winery's history began 150 years ago, already under the far-sighted banner of eco-sustainability carved from natural stone underground, it was later modernized and transformed into one of the most beautiful and tradition-rich private wineries in South Tyrol. An architect by profession, Elena Walch married the heir to one of the oldest wine families in the region, bringing with her new concepts for modernizing the traditional winery. Today, business management is placed in the hands of daughters Julia and Karoline Walch, the fifth generation of the family. The deep conviction that the quality of wine is born in the vineyard thus brings with it a willingness to work without compromise, respecting the individual characteristics of each vineyard. With 60 hectares under cultivation, Elena Walch ranks among the most important wine personalities in South Tyrol. Description

The " Ewa" cuvée, which stands for E-lena WA-lch, is light and very fresh cuvée that comes from the combination of three grape varieties of great aromatic intensity. An excellent vintage favored by a warm and stable summer that allowed the grapes to arrive at the winery healthy and with balanced values. A wine with beautiful fruit and surprising complexity and great structure.

Organoleptic characteristics: 

Intense straw yellow, great olfactory impact, with floral hints over which rose dominates, herbs such as sage and thyme and spices. The sip is agile, fresh and elegant.

Storage time: 

2-4 years old

Vinification 

The three grape varieties are vinified separately and the cuvée takes place in the spring. The grapes are soft-pressed, while only the Gewürztraminer grapes make, prior to processing, a 6-hour maceration on the skins. The must undergoes static clarification and is then fermented in steel tanks at a controlled temperature of 20°C. The wine then ages for several months on its lees in stainless steel containers.
