Winery
The winery is designed to be "integrated" perfectly in the territory hosting it, the immense naturalistic heritage of the Murgia.
Architecturally inspired by the De Laurentis factory - which, with its splendid cross vaults, has stood alone on a hill in nearby Santeramo since the end of the nineteenth century - it reflects the desire to preserve a certain harmony between project and landscape.
The use of autochthonous materials, such as tuff and mazzaro, has allowed the realization of a project in full harmony with the evocative power of nature, integrating the structure with the surrounding environment.
The result is a winery that is also a real habitat in balance with our extraordinary landscape.
LOVE FOR THE TERRITORY IS OUR PHILOSOPHY
We cultivate our vineyards in the full respect of the environmental biodiversity: a philosophy that accompanies us since the very first day and that led us to obtain the Organic certification in 1996, among the first wineries in Apulia.
Since then, we have never abandoned our twofold mission: to safeguard the health of the consumer by producing healthier wines and, at the same time, that of the territory by rediscovering and enhancing autochthonous varieties.
The investments for the equipment of a highly technological vinification and sparkling plant, allow us to use less than 50% of sulfur dioxide allowed by the organic regulations.
A real innovation in the production protocol that culminated in 2016 with the birth of two wines completely free of added sulfites: Le Dritte Aglianico and Le Dritte Greco.
From here, our even more ambitious goal for the next years: the production without added sulfites of the whole range of COLLI DELLA MURGIA wines.
Description
Fondovico is a dry white sparkling wine made from Greco, Malvasia, Bianco d'Alessano and Moscato grapes. It was born as a 'tribute' to a historic wine of the city of
Gravina in Puglia , the Verdeca. This is the sparkling wine of medium structure, but with an intense and floral bouquet, thanks to the
presence of Malvasia and Moscato in the blend.
Organoleptic characteristics:
Straw yellow color, with aromas reminiscent of annurca apple and sage, and floral scents reminiscent of acacia. The taste is fresh and sapid with a fine and very persistent perlage.

Cold static decantation and fermentation at 16° for two weeks
