Description

A sparkling wine made using the ancestral method. Grapes that used to be thinned after mid-August are instead harvested to obtain a wine that is extremely enjoyable in its simplicity

Organoleptic characteristics: 

It presents itself to the eye with an amber yellow colour. The nose presents citrusy hints of grapefruit, strawberries and raspberries. Very smooth and linear on the palate, savoury and fresh

Storage time: 

2-7 years

Vinification 

The grapes are harvested by hand and pressed in bunches whole. After a static decantation at 5 degrees for a few days, the wine is destemmed and inoculated for fermentation in steel vats. Fermentation is interrupted with a few grams of residual sugar to allow re-fermentation in bottle. The wine, crown corked, does not undergo any disgorgement. If there were any residue at the bottom, it would be completely natural.
