Poderi del Paradiso spreads out in an amphitheatre of vineyards at the foot of San Gimignano and boasts about thirty hectares under vine, producing, with the precious advice of oenologist Paolo Caciorgna, more than 150 thousand bottles a year. Although they are very fond of Vernaccia di San Gimignano, which they produce in numerous versions, the company is a convinced experimenter with the San Gimignano terroir. Since the early 1980s, it has planted in its vineyards, alongside traditional vines such as Vernaccia and Sangiovese, also Cabernet Sauvignon and Franc, Merlot, Syrah, and Chardonnay.
Description
Paterno II from the Poderi del Paradiso winery is a wine of great structure produced at 100% from Sangiovese grapes from particularly suitable vineyard parcels harvested by hand. It is a warm, deep wine with biting tannins and a cinnamon finish.
Organoleptic characteristics:
Concentrated ruby red colour with intriguing aromas of sweet and spicy spices blended with red fruits and violets. Warm palate with biting tannins and cinnamon finish.
Storage time:
over 5 years
Vinification
Fermentation and maceration for 3-4 days in a temperature-controlled rotovinificatore. Malolactic fermentation.
