Valentina Passalacqua is an organic farm located in northern Apulia, on the slopes of the famous Gargano National Park. The winery cultivates 80 hectares following the biodynamic philosophy, partly espalier or bush-trained, and produces Negroamaro, Primitivo, Aleatico, Nero di Troia, Bombino, Fiano Minutolo, Falanghina, Greco, Montepulciano, Pinot Grigio and Chardonnay divided into three collections. The company's objective has always been the valorisation of indigenous grape varieties, cultivated and vinified using natural methods, and in particular Bombino and Nero di Troia.
Description
Serenità della Valentina Passalacqua is a white Apulian wine made from Bombino grapes. It is a natural, unfiltered wine with a 6-day spontaneous fermentation. It is a fresh and mineral wine typical of Bombino with a fruity finish.
Organoleptic characteristics:
It has a straw-yellow colour. The nose has notes of Mediterranean scrub, hay and herbs. On the palate fresh and mineral typical of Bombino with a fruity finish.

2-3 years
Vinification
Spontaneous fermentation in steel with 6 days of skin contact. Unfiltered. No temperature control.
