Over 7 years
Vinification
It takes place according to traditional practices in the Bordeaux area: individual vineyard plots are vinified separately, the must reaches temperature-controlled stainless steel tanks by gravity where fermentation takes place. Malolactic fermentation takes place 2/3 of the mass in stainless steel tanks and 1/3 in new oak barrels.
