Damijan began his life as a winegrower by cultivating a small chardonnay vineyard owned by his grandfather. His great teacher? Josko Gravner. Over time, he began to acquire old vineyards of Ribolla, Malvasia, Tokaji and Cabernet on Mount Calvario. Damijan is absolutely rigorous in all stages of production from the vineyard to the cellar; in the vineyards he practices organic techniques and in order to decide the harvest time, he walks through the vineyards tasting the skin and the seed, because the substances needed to make an excellent wine are between these 2 elements. If the grapes are not ready, they are not harvested even knowing that they will lose part of their production. Even in the cellar, all the stages of work are marked by the phases of the moon, spontaneous fermentation, indigenous yeasts, maceration on the skins even for white wines. A land made of ponca and the greatest job of the winemaker is to know how to listen to nature.
