The origins of Distilleria F.lli Pisoni are somewhat lost in the mists of time, as the winemaking tradition has always been carried on by the many generations of the Pisoni family, who have succeeded one another over the years. For the Pisoni family, distilling grappa is an art. There are no schools that teach how to distil; progress in this field comes from a combination of experience and experimentation. The modern distillery, renovated in 2003 and designed directly by the owners, is the result of a technological evolution guided by four generations that have brought their contribution of innovation combined with experience handed down. From the first small copper stills at the end of the 19th century, which were fuelled by wood fires, we arrived at the current steam-powered plant, of which the bain-marie boilers topped by splendid columns, also strictly made of copper, can be admired. The distillation of grappa is carried out in full respect of the fundamental production rule: using a raw material of impeccable quality and freshness. An important contribution to this evolution was made by Tullio Zadra (1905/1991), a master coppersmith from Trentino and Arrigo Pisoni's father-in-law, who is known for having introduced the bain-marie distillation method with flat rectification columns to Trentino. Some parts of the plant still bear the nameplate of his renowned workshop.Before bottling, a sample of grappa is sent to the Istituto di Tutela della Grappa Trentina (a prestigious quality award), where it undergoes rigorous chemical and organoleptic analysis
