The PaoloLeo winery is divided into two wine cellars, the first is located in the heart of Salice Salentino DOC (San Donaci) the second, inaugurated in'August 2020, is at the gateway to Primitivo di Manduria DOC (Monteparano). The winery is flanked by an agricultural company that owns more than 70 hectares and an ancient 16th century farmhouse surrounded by vineyards. Paolo Leo, born in 1960, was born into a family where producing wine was an unavoidable inheritance; and today it is still an heir, the eponymous Paolo Leo, Nicola's son, who runs the new winery, together with his wife Roberta and sons Nicola, Stefano, Francesco and Alessandro, flanked by loyal collaborators. The company has been present on the Apulian and international market for years, and has always operated with respect for the environment and its territory rich in tradition and history. Vines are grown on predominantly clayey-calcareous soil, with sandier areas and others with emerging rock, with a mild climate that has made Salento, a fertile sub-region of the Puglia region, which bases its economy on agriculture.

Description

The Alture line of the Paololeo winery was created in collaboration with oenologist Lino Carparelli to enhance the minor indigenous grape varieties of Apulia, cultivated in the high hills. The Alture line takes its name from its places of origin, hills between 350 and 380 metres above sea level in the Itria Valley. Verdeca is an ancient white grape variety of uncertain origin, fairly widespread in Apulia. Its maximum productive and qualitative expression is linked to the territory of the Itria Valley, where it is grown on a hilly area that boasts excellent sun exposure and is well ventilated. These conditions allow the production of fresh and aromatic wines, delicately fruity and elegant, that have nothing to envy to other similar vines grown in more northern regions of the Boot.

Organoleptic characteristics: 

Crystal clear straw yellow colour with greenish highlights On the nose delicate hints of apple, citrus fruits and white fruits. Fresh and sapid, it leaves a long, elegant finish.

Storage time: 

2-3 years

Vinification 

Harvested in boxes, the grapes are left overnight in a cold store at sub-zero temperatures (20-hour cryomaceration). The grapes are then destemmed, followed by crushing, a short cold maceration and subsequent soft pressing of the marc. The low-temperature fermentation preserves aromas and freshness.
