Unspoilt soil with wonderful plant biodiversity, surrounded by breathtaking views and pure air. In 2011 the conversion to biodynamic agriculture.
Description
Cappuccetto Rosa is not what we would call an 'easy' rosé, but is intended to be a red wine with short skin contact, where the early harvested Sangiovese grapes are able to bring out their energy and flavour. Organoleptic characteristics:
The wine has a lively pink colour. The aromas are centred on fruit, strawberry, cherry, berry, black cherry, redcurrant, cranberry, blood orange intertwined with more complex hints of rhubarb, dried herbs and vegetal notes. Dry, medium-bodied with high acidity in the mouth. Long finish of tart red fruit and minerals
Storage time:
1-4 years
Vinification
Direct pressing of the grapes, the entire vineyard is harvested specifically to produce this rosé. The grapes that arrive at the winery are crushed, destemmed and left to macerate overnight. The following day they are separated from the skins.
