Winery
Castello Romitorio is a renowned Tuscan winery located on a hill complex at the foot of Mount Amiata, in Montalcino in the province of Siena. The owner of the winery, famous painter Sandro Chia, after having bought Castello Romitorio in 1984, dedicated many years to the restoration of the castle and to the planting of new vineyards on its lands, while building a modern and super technological winery, supported by the advice of one of the best enologists of Italy, Carlo Ferrini. After thirty years of work on the territory, today Castello Romitorio is an internationally recognized wine producer, a specialist of Sangiovese and Brunello di Montalcino. The commitment of the Chia family moves between tradition and the search for excellence, classicism and innovation.
Description
Brunello di Montalcino Riserva 2016 from Il Castello Romitorio winery is an excellent Tuscan wine. Since its inception, Il Castello Romitorio has produced only very few vintages of this wine. Only a truly extraordinary vintage can produce such a wine.
Organoleptic characteristics:
The nose is complex with aromas of ripe red fruit, cherry, coffee, licorice and vanilla. In the mouth it is round, soft and elegant with remarkable tannins.
Storage time:
20-25 years old
Vinification
Fermentation takes place in stainless steel tanks, with a short initial period of cold maceration (below 20°C) with the skins for about 15-20 hours, followed by higher temperature controlled maceration that can last up to 24 days. Malolactic fermentation begins naturally and lasts for about 10 days, until the wine is allowed to settle to separate it from the sediment.
