The Terrecarsiche winery of Nicola Insalata, founded in 1939, is the result of a strong family tradition. It is located in central Apulia, in Castellana Grotte. It produces the Typical Geographical Indication and Controlled Designation of Origin wines of Gioia del Colle and Valle D'Itria. The company's wines include a Gioia del Colle Primitivo, Fanova, from vineyards located in Castellana Grotte and Acquaviva delle Fonti. The company's overall production is around 500,000 bottles per year.
Description
Cavabianca' is a unique product from the historic Terrecarsiche winery, a white wine that is part of the 'Cru' line of special wines as it is produced in vineyards that have unique characteristics due to their position, exposure, soil and history. A white wine produced at an altitude of 450 m in Valle d'Itria, from a careful blend of Bianco d'Alessano, Fiano and Chardonnay. What makes it special is the phase after bottling, as it is 'kept' at a depth of 70 metres in the dark in the marvellous underground environment of the Caverna della Fonte di Castellana Grotte at a constant temperature of 15° and humidity just above 90%. A limited production for a wine with a return to its origins.
Organoleptic characteristics:
Intense straw yellow colour with golden hues. Intense nose, characterised by aromas of yellow fruit, peach, sweet spices, vanilla and marzipan.
The taste is velvety, full-bodied, slightly sapid, long finish with hints of fresh almonds.

Vinification
Half fermentation in temperature-controlled stainless steel and completion in barrique for about 8 months
