Giovanni Aiello is an oenologist and wine producer who has increasingly established himself on the Apulian wine scene, even crossing international borders with great success. It is thanks to his love for the vineyard and his land, Apulia, and it is among the rows of the Canale di Pirro that his adventure began. He studied oenology in the cradle of viticulture with its ancient charm, in Veneto and Friuli, working between the sunny valleys of California and the distant hills of Australia, taking his roots everywhere. "It is said that wine is the most authentic expression of a territory, and I have always been convinced of this. That is why I chose to start from a simple idea: to produce wines that represent my land, a particularly fortunate and fertile area that runs through Putignano, Castellana and Fasano. The 'Chakra' line, with its hand-painted labels, refers to the essentiality of Apulian landscapes, made of living stone and colourful expanses of fields.

Description

Giovanni Aiello's Chakra Blu is made from the indigenous Verdeca, Maruggio and Marchione grapes of Canale di Pirro; it is the nectar of the gods, son of mother earth and father wind. A sparkling white wine with a fine, continuous perlage. It is made the old-fashioned way, following the technique of the ancestral method, i.e. a second refermentation in the bottle.

Organoleptic characteristics: 

It is naturally cloudy with a pale straw yellow colour. Fine, creamy perlage. The nose releases intensely floral and fruity yeast aromas, with notes of acacia, pear and yellow peach, against a light balsamic background that enhances its great freshness and minerality. Fresh and lively on the palate, with a savoury vein that lends character to the wine and makes you feel the terroir to which it belongs.

Storage time:

Vinification 

Vinification takes place in stainless steel at a controlled temperature. In January, the liqueur de tirage necessary for frothing is added to the base wine. The wines are then bottled and corked with a crown cork. At the end of fermentation, a process that lasts approximately fifty days, and the subsequent frothing, the wines remain sur-lie in the bottle.
