Pietro Bordiga was a passionate herbalist, a profound connoisseur above all of Alpine botanicals and oriental spices that were much sought after at the time. In the context of the Risorgimento, thanks above all to his botanical knowledge, Pietro Bordiga invented a recipe for Vermouth di Torino (created in its modern version in Turin a few decades earlier), which was immediately greatly appreciated in the city. He then decided to start his own business as a Vermouth producer and opened his distillery in Cuneo. Over the years, the company developed thanks to the genuineness and quality of its products and became a point of reference not only for Vermouths, but also for liqueurs and spirits, especially alpine ones, but not only: at the beginning of the 20th century, a juniper distillate was produced in Bordiga's stills that is still the envy of the world's best-known gins. Characteristics that remain to this day: good Piedmontese wine, alpine herbs still hand-picked by the mountain folk, the finest spices, the purest grain alcohol, the finest sugar and the water of our Alps form the basis with which our master distillers, with their ancestral and jealously guarded wisdom, produce the renowned Bordiga products that are today appreciated all over the world.

Description

Presented in 2014 by disttelira Bordiga, one of the pioneers of Italian gin, the 'Dry' version has a recognisable and marked taste.
Appreciated abroad, it is a gin that has earned its place in the contemporary scene. Distilled in limited quantities in a copper pot still over a wood fire. Aromatic and balsamic, it is produced using juniper berries combined with herbs from the Maritime Alps.

Organoleptic characteristics: 

Crystal clear colour. Nose, shows a characteristic and intense bouquet of herbs and mountain flowers, hints of medicinal herbs, hints of lemon peel and the classic balsamic sensations of juniper berries. Round and balanced on the palate, soft, fresh and persistent on the finish.

Vinification 

use of pure alcohol as the extraction medium for the aromatic part. The alcohol is obtained exclusively from cereals and has a higher alcohol content than 96%, which is then adjusted by adding pure water, the botanicals are processed and put in contact with alcohol of different strengths, depending on the type of extraction required. The infusion times also vary: for distillates, they are around 5 to 6 days. Bordiga uses two stills. Bordiga's oldest still, dating back to the 1700s, is a French-style copper bain-marie still fired by wood fire.
