Winery
Curatolo Arini is the oldest Marsala winery in Sicily, since 1875, and is still run by the founder's descendants. Grillo, Catarratto and Inzolia grow in the coastal region of Marsala. The sun, heat and constant winds that mitigate temperatures by drying the nighttime humidity brought by the sea along with the generosity of the red soils make this terroir the ideal place to grow these typical island varieties characterized by strong notes, richness in aroma and sugars
Description
Made from native Grillo, Cataratto and Inzolia grapes, DOC white wine , alchol and cooked must are combined according to the same old family recipe, and patiently aged in Slavonian oak barrels for more than 4 years.
Organoleptic characteristics:
Topaz color with amber highlights. Hints of dried figs, raisins and vanilla and wood stand out on the nose. The palate is smooth and balanced, moderately dry with a spicy finish.

Vinification
Destemming and roller crushing. Maceration and fermentation at a controlled temperature of 25 - 28 C° in stainless steel for about 14 days to transform all sugars into alcohol and optimally extract polyphenols, which are important for the aging phase. Wine alcohol is added until the minimum alcohol content of 18 degrees is reached, mistelle and cooked must.
