Kolonne Null is a wine company that focuses on creating alcohol-free wines. It only uses vintage wines or high quality cuvées that it subjected to dealcoholisation by vacuum distillation. The winning philosophy is definitely to maintain a close collaboration with the winegrowers, regularly exchanging ideas during visits to the cellars, while the winegrowers work with them in the Berlin workshop to further develop the creations. Each wine region and each wine producer is slightly different. They are fortunate to have access to many wineries and vineyards around the world, which allow them to choose from a huge variety of fine wines. The requirements of the grapes and the selective process of creating the wines leave no room for compromise. We share a common passion and interest in creating fine non-alcoholic wines.
Description
Kolonne Null's Riesling Alcohol Free is made from dealcoholised Riesling-based wine. De-alcoholisation was carried out by means of a vacuum distillation process, whereby the alcohol was extracted at a low temperature of 30°C. Subsequently, the wine's natural aromas were recovered and it ended up retaining its organoleptic profile as well as its character and overall style. No artificial flavourings or colourings were added. The characteristic acidity of Riesling is particularly spicy in this vintage and requires great finesse during dealcoholisation. But it is precisely this well-balanced spicy acidity that gives the wine a special tension and ensures excellent drinkability.
Organoleptic characteristics:
Straw yellow colour with golden hues. On the nose, yellow fruit meets herbaceous and citrus scents. In the mouth it is fresh, savoury and elegant with a soft and pleasant finish.
Storage time:
2-3 years
Vinification
Fermentation takes place with the use of spontaneous yeasts, maturing on the lees.
Followed by a dealcoholisation process by distillation.
