Description
Produced using the RIPASSO technique deliberately applied more restrictively than the production specification, it is obtained by repassing Valpolicella Classico over Amarone pomace just once, resulting in an authentic wine of terroir.
Organoleptic characteristics:
Deep ruby red in color, it has hints of red fruit, spices and cocoa on the nose. In the mouth it is warm and soft, well balanced by round tannins. Spicy tones return, well supported by good acidity and the right alcohol content.
After manual harvesting, immediate crushing of the grapes and subsequent maceration at a controlled temperature. In early March, the Valpolicella Classico is repassed over the Amarone pomace just once.
