Revì, a winery that finds its inspiration in bubbles. The name Revì comes from the toponym of the production area; an area that, according to legend, was devoted to the cultivation of a vine from which a superior, royal wine was obtained: the "Re vin," Revì. With extreme attention to the search for the highest quality and always maintaining a strong link with the Trentino territory, Revì produces only TRENTODOC, the Trentino bubbles. Over the years, the passion that led to the birth of the company has also infected family members, and thanks to close collaboration, there has been an increase in the number of bottles and types of TRENTODOC produced. Today Revì confirms its mission to be synonymous with excellence in the production of TRENTODOC. The founder isPaolo Malfer, who in 1982 after years of testing and trials by which he perfected the production techniques studied in school books, decided to establish the winery. First and foremost, TRENTODOC is born from careful care of the vines; the grapes, ripe to the right point, are harvested by hand and immediately subjected to soft pressing, which allows obtaining only flower must, rich in aromas and flavors. This is followed by the first fermentation, which must take place slowly and at a low temperature so that all the aromatic components do not lose their characteristics of elegance and delicacy. The wine resulting from this meticulous process is ready to be transformed into the prestigious TRENTODOC. Thus begins the process known as the "classic method."
