Revì, a winery that finds its inspiration in bubbles. The name Revì derives from the toponym of the production area; an area that, according to legend, was devoted to the cultivation of a vine from which a superior, royal wine was obtained: the "Re vin", Revì. With extreme attention to the search for maximum quality and always maintaining a strong bond with the Trentino territory, Revì produces only TRENTODOC, the Trentino bubbles. Over the years, the passion that led to the birth of the company has also infected family members, and thanks to close collaboration there has been an increase in the number of bottles and types of TRENTODOC produced. Today Revì confirms its mission to be synonymous with excellence in the production of TRENTODOC. The founder is Paolo Malfer, who in 1982, after years of tests and trials in which he perfected the production techniques studied in school books, decided to found the winery. TRENTODOC is born first and foremost from the careful care of the vines; the grapes, ripe to the right point, are harvested by hand and immediately subjected to soft pressing, which allows only the flower must, rich in perfumes and aromas, to be obtained. This is followed by the first fermentation, which must take place slowly and at a low temperature so that all the aromatic components do not lose their characteristics of elegance and delicacy. The wine obtained from this meticulous process is ready to be transformed into the prestigious TRENTODOC. Thus begins the process known as 'classic method';

Description

The Cavaliere Nero is a sparkling wine of considerable depth, shrouded beginning with its name by a veil of mystery, different from the others, a dark one that evokes evening gowns for the latest addition to the Revì house, much desired to add a Pinot Nero in Purity to the collection. A wine of great charm and elegance that knows how to show its muscles without sacrificing the class that comes with a very long resting period on the lees, 72 months. The vineyard is located at Villa Montagna between 550 and 700 metres above sea level. This altitude has a significant temperature range that gives the grapes the ideal characteristics to produce a prestigious bubbly. It took patience and dedication, exalting the terroir through Pinot Noir to give us a unique Rosé. Thanks to its low residual sugar content, this Extra Brut is perfect for enhancing the fragrance and high quality of the grapes.

Organoleptic characteristics: 

It displays a brilliant antique pink in the glass. The nose is intense, fine and variegated with a slight hint of toast, reminiscent of freshly baked bread crust, yeast and small fruits such as strawberry, currant, raspberry, blueberry and then cherry. A particular floral perfume reminiscent of nigritella with an aroma that fades into notes of chocolate and vanilla to make up a fragrant and complex whole. On the palate it is crisp, with its ample and succulent mouthfeel, medium-dry, with a fruity vein reminiscent of the aromatic palette described for the nose. The harmony and persistence are excellent, with a nice salty, mineral vein and fresh acidity.
