Soft sensations, those tending to be sweet, fatness and unctuousness are compensated and tend to be enhanced by freshness, acidity and effervescence.
The second most important rule is that fish and leavened desserts should be matched with white wines because soft or sweet sensations on the palate, fatness and unctuousness are enhanced by freshness, acidity and effervescence.
Sapidity is compensated and enhanced by the smoothness of the wine, such as the one we can find in some full bodied white wines or in some red wines produced with specific grapes and aged for a long time;
Juiciness needs to be compensated with a slight astringency effect, which dries up gums and palate, such as the one of some great red wines obtained from grapes characterized by a marked tannicity;
Lastly, the structure of food must be matched to the structure of wine on equal levels. An intense and structured food can be matched with a light and delicate wine, and vice versa.
