Winery
Fattoria La Rivolta was founded more than a century and a half ago, in the Torrecuso district of the same name, in the province of Benevento, and covers about 60 hectares, all owned by the Cotroneo family, growing 100% organic wine certified by ICEA and working exclusively with native Sannio grape varieties such as falanghina, coda di volpe, fiano, greco, aglianico and piedirosso. The winery is located inside an old stone farmhouse dating back to the early 1800s, which houses the cooperage and bottling area. The production phase is all in-house, from hand-picking the grapes in the vineyards surrounding the winery to processing them. The focus has always been on low production per hectare. Since 2001 the winery has been under European Organic Certification (ICEA). The vines are all DOP and DOCG branded from native grapes of the Sannio subzone Taburno area, eliminating any production of international or non-typical vines from one of the Italian areas with the highest quality wine vocation. This is confirmed by the many awards from consumers and critics, achieving, in addition, countless prizes from guides all over the world.
Description
Aglianico del Taburno is the main grape variety of the Avellino and Benevento area. The imprint given by the Fattoria La Rivolta winery is characterized by its qualities of complexity of both olfactory and gustatory aromas, with a tannic texture well balanced with softness. A territorial label, able to reserve pleasant surprises that lends itself to a good conservation over time revealing pleasant surprises.
Organoleptic characteristics:
It is dark ruby red in color to the eye. Suoadent on the nose with hints of well-ripened fruit, orange peel, cocoa and nuances tending more toward balsamic. In the mouth it is full-bodied, with firm tannins and a vibrant, sharply cut sip.
Storage time:
5-10 years old
Vinification
In stainless steel fermenters for a period of 20-25 days, at a temperature of 27 degrees. Subsequent aging takes place for 18 months in barrels, and then, after bottling, for an additional 6 months in bottles.
