The Japanese distillery White Oak was established in 1888 but it has been producing whisky in a traditional way and in small quantities only since 1919. The actual distillation process began in 1984, the year the company built a new plant. Before that time, all the whisky produced was used in a variety of blends known as "White Oak". The distillery belongs to the Eigashima company, established in 1679 and one of the most ancient sake producers in Japan, in the city of Akashi.
Description
Akashi Sherry Cask è un blended whisky prodotto per il 70% Whisky di cerali e 30% orzo maltato. La sua particolarità è la doppia distillazione attraverso 2 “pot still” in alambicchi della distilleria che funzionano solo per un mese all’anno quindi la quantità di whisky prodotta è sempre molto limitata.
Organoleptic characteristics:
Color ambra brillante, al naso si sprigionano note di albicocca, frutta secca e vaniglia e spezie. Gusto morbido, lievemente dolce con ricordi di spezie dolci e frutta secca.
Storage time:
over 20 years
Vinification
Doppia distillazione in 2 alambicchi discontinui pot still. Il distillato ottenuto riposa per un periodo di 3-4 anni in botti di quercia americana, quindi termina l’affinamento per 6 mesi in botti di ex sherry
