Poderi del Paradiso spreads across an amphitheater of vineyards at the foot of San Gimignano and boasts about thirty hectares planted with vines, realizing a production, with the invaluable advice of oenologist Paolo Caciorgna, of more than 150,000 bottles annually. Although they love Vernaccia di San Gimignano very much, which they make in numerous versions, the winery is a firm experimenter with San Gimignano terroir. Since the early 1980s in its vineyards it has planted alongside traditional grape varieties such as Vernaccia and Sangiovese, also Cabernet Sauvignon and Franc, Merlot, Syrah,and Chardonnay.
Description
From the Bottaccio vineyard, a cuvée of Sangiovese and Cabernet Sauvignon from Poderi del Paradiso. An incredibly balanced red that pairs masterfully with typical Tuscan dishes.
Organoleptic characteristics:
Ruby red color. Aromas of cherries and ripe red fruit. Good structure in the mouth with soft tannins.
Storage time:
over 5 years
Vinification
Fermentation and maceration for 3-4 days in a temperature-controlled Rotovinificatore. Malolactic fermentation. Aging in barrels for 20 Hl. For 12 months.
