The Masseria Mita farm is located in the Salento region of Apulia. The owners are Vincenzo and Maria Imperatrice who have always been passionate about organic viticulture. The farm has 10 hectares dedicated to indigenous vines of Primitivo, Negroamaro and Aleatico and some international vines such as Chardonnay, Riesling and Sauvignon. The training system of the vineyards is espalier.
Description
An organic wine produced from Primitivo grapes grown in the Crispiano countryside in the Manduria area in the province of Taranto. Of great versatility in table pairings, it represents the essence of the grape vinified in purity.
Organoleptic characteristics:
Brilliant ruby red colour with violet reflections. Enveloping bouquet, intense cherry and black cherry, pleasantly spicy TASTE: sweet and savoury attack, an important and balanced centre of the mouth, persistent finish.
Storage time:
over 5-7 years
Vinification
Short pressing with cold maceration. Fermentation at a controlled temperature of 22-24°C for 8-10 days, during which daily pumping over is carried out. Spontaneous malolactic fermentation immediately after alcoholic fermentation.
