The Levi distillery is the daughter of a great tradition and thanks to Lidia and Romano Levi, it has met art, dressing up with labels made by great names, becoming collectors' items. Romano Levi, nicknamed "il Grappaiolo Angelico" by Luigi Veronelli, inherited the distillery in the Langhe region of Neive from his father Serafino when he was just 17 years old. He kept the same and only discontinuous direct-fire copper still he worked with for 63 years, which is still the only one in the world still in operation today. His sister Lidia, on the other hand, was always busy studying the marc and researching aromatic herbs. Today the distillery-house is a living museum that continues to distil according to tradition, thanks to friends who still jealously guard the last grappas still left to age in casks. They are fiery grappas, 'wild' as the Maestro liked to call them, with a unique and inimitable taste.

Description

GRAPPA OF THE WILD WOMAN WHO CLIMBS THE HILLS. Grappa 'Paglierina' is a label from original drawings by Romano Levi. From the Langhe, places where the vine has found one of its greatest expressions, come the pomace from the DOC and DOCG vineyards of historic producers in Neive, Barbaresco, Trezzo, Treiso and Alba. These are processed locally and blended according to an ancient recipe of Serafino Levi; the resulting Grappa finds an extraordinary and exciting balance derived from the tanning in underground pits and a long period of maturation in wood.

Organoleptic characteristics: 

Clear straw yellow colour. Fruity, herbaceous bouquet with notes of wood and liquorice. The taste is dry, soft with a long liquorice finish and enjoyable persistence and balance

Vinification 

The distillation phase uses a discontinuous copper still with direct fire and submerged marc. The steam generated is condensed and fractionated by the phlegm in a 7-plate copper column. At the end, the Grappa is transferred for 60 months into classic Piedmontese 700-litre barrels made of different types of wood, stored in rooms where the temperature is between 14 and 19 degrees.
