Domaine Martinolles is located in Saint-Hilaire, where the community of monks of the abbey invented sparkling wine in 1544, long before Dom Pérignon. In this setting, a local hunting reserve that has preserved a unique fauna, over 30 hectares of olive groves, pine forests and oaks alongside vines. The vines are cultivated according to sustainable agriculture and are Terra Vitis certified. The climate, predominantly Mediterranean, benefits from oceanic and Pyrenean influences, making it an ideal microclimate for producing sparkling wines from Chardonnay, Pinot and Cabernet. The temperature difference between day and night is over 15°C, which prolongs the ripening period of the grapes and produces a good balance in terms of acidity. The soil is clay-limestone to sandy-limestone, with most of the plots facing north at an altitude of between 190 and 300 metres.

Description

The Maison Martinolles is a jewel in the hills surrounding the village of St. Hilaire; it covers 100 hectares and enjoys an excellent location. The terroir, famous since Roman times, produces wines of rare elegance and unique character. This is an excellent terroir for the pinot noir variety; it gives us a savoury wine with notes of red fruits and liquorice, showing delicacy and elegance. A red wine suitable for fine weather.

Organoleptic characteristics: 

Medium-intensity ruby red colour with violet hues Elegant and complex bouquet of roses and red fruit, strawberry, underbrush, cherry brandy and sweet spices, followed by notes of vanilla. Balanced on the palate, long and complex f inal with hints of liquorice, it rests on a beautiful tannic structure, showing delicacy and elegance.

2-5 years

Vinification 

Destemming of the grapes. Cold pre-fermentation at 10°C. Fermentation at a controlled temperature of 23°C for 5 days. Daily pumping over during fermentation. Both malolactic fermentation and ageing are carried out in oak barrels.
