Domaine Martinolles is located in Saint-Hilaire, where the community of monks of the abbey invented sparkling wine in 1544, long before Dom Pérignon. In this setting, a local hunting reserve that has preserved a unique fauna, over 30 hectares of olive groves, pine forests and oaks alongside vines. The vines are cultivated using sustainable agriculture and are Terra Vitis certified. he climate, predominantly Mediterranean, benefits from oceanic and Pyrenean influences, making it an ideal microclimate for producing sparkling wines from Chardonnay, Pinot and Cabernet. The temperature difference between day and night is over 15°C, which prolongs the ripening period of the grapes and produces a good balance in terms of acidity. The soil is clay-limestone to sandy-limestone, with most of the plots facing north at an altitude of between 190 and 300 metres.
