The wine obtained with the ripasso technique is strictly connected to the greatest wine of Valpolicella:
Amarone. After the pressing of dried grapes, from which Amarone is produced, the wine is "repassed".
Valpolicella produced in the October harvest on the still warm pomace of Amarone. It begins a
second alcoholic fermentation which increases the alcohol content and the wine becomes richer in color, in
body, aromas.
