Cantina Elia is located on the walls of the historical centre of Ceglie Messapica, in the territory of Valle D'Itria, the valley of the trulli. This geographic position gives the possibility to work with the most important autochthonous vineyards of Apulia: the Negramaro vineyard in the Torre Guaceto area, the Susumaniello in the countryside of Brindisi, the Primitivo bred with the alberello system in Manduria and finally the Verdeca in Locorotondo. It is a small family-run business led by Sergio Elia, who graduated as a wine technician in Locorotondo and graduated as an oenologist from the Catholic University of Piacenza. Over the past 13 years he has broadened his knowledge of the wine world by working in Bolgheri, Barossa Valley, French Switzerland and finally Barolo. The style of Cantina Elia's wines is the combination of all these experiences.

Description

Apulia is a land of rosé excellence, and with this wine Sergio Elia has given his interpretation by creating a wine that is the result of hours and hours of work. Rosarina was born from the combination of his parents' names and represents the symbol of their love. A fresh and extremely elegant wine produced from the vineyards between Serranova and Torre Guaceto, Salento, from Susumaniello 70% and Negramaro 30% grapes

Organoleptic characteristics: 

The wine is a deep pink with ruby hues. The nose opens with red fruits, especially cherry and sour cherry The sip is round, elegant, haughty. A wine of remarkable olfactory persistence. Powerful but with great freshness and flavour

Vinification 

On arrival at the winery, the grapes are crushed, destemmed and pressed. This is followed by fermentation at low temperatures in steel vats for about 3 weeks. The period from winter to spring is managed with simple bâtonnage, which would be the stirring of the noble lees in the wine so that the necessary plumpness and complexity can be given naturally.
