Cantina Elia is located on the walls of the historical centre of Ceglie Messapica, in the territory of Valle D'Itria, the valley of the trulli.
This geographic position gives the possibility to work with the most important autochthonous vineyards of Apulia: the Negramaro vineyard in the Torre Guaceto area, the Susumaniello in the countryside of Brindisi, the Primitivo bred with the alberello system in Manduria and finally the Verdeca in Locorotondo. It is a small family-run business led by Sergio Elia, who graduated as a wine technician in Locorotondo and graduated as an oenologist from the Catholic University of Piacenza. Over the past 13 years he has broadened his knowledge of the wine world by working in Bolgheri, Barossa Valley, French Switzerland and finally Barolo.
The style of Cantina Elia's wines is the combination of all these experiences.
Description
A grape variety that was on the verge of extinction, but thanks to the efforts of local winegrowers has recently come back into the limelight. The grapes of the red Ninino are harvested in Brindisi.
Organoleptic characteristics:
Ruby red with violet hues. Complex nose with clear hints of red fruit and spice.
Full-bodied and rightly tannic on the palate
Storage time:
2-5 years
Vinification
Fermentation takes place at controlled temperature in steel tanks for about 2 weeks. Ageing in steel tanks followed by periodic batonnage for the next 7 months.
