Cellar
Revì, a winery that finds its inspiration in bubbles. The name Revì derives from the toponym of the production area; an area that, according to legend, was devoted to the cultivation of a vine from which a superior, royal wine was obtained: the "Re vin", Revì. With extreme attention to the search for maximum quality and always maintaining a strong bond with the Trentino territory, Revì produces only TRENTODOC, the Trentino bubbles. Over the years, the passion that led to the birth of the company has also infected family members, and thanks to close collaboration there has been an increase in the number of bottles and types of TRENTODOC produced. Today Revì confirms its mission to be synonymous with excellence in the production of TRENTODOC. The founder is Paolo Malfer, who in 1982, after years of tests and trials in which he perfected the production techniques studied in school books, decided to found the winery. TRENTODOC is born first and foremost from the careful care of the vines; the grapes, ripe to the right point, are harvested by hand and immediately subjected to soft pressing, which allows only the flower must, rich in perfumes and aromas, to be obtained. This is followed by the first fermentation, which must take place slowly and at a low temperature so that all the aromatic components do not lose their characteristics of elegance and delicacy. The wine obtained from this meticulous process is ready to be transformed into the prestigious TRENTODOC. Thus begins the process known as 'classic method';
Description
The Rosè Brut version is produced predominantly with Pinot Noir and a small percentage of Chardonnay. It stands out for its immediate freshness, well-integrated with the taste structure, typical of a mountain sparkling wine. Cantina Vinicola Revì is in fact located right on the slopes of Monte Bondone, an area highly suited for viticulture. Vintage 2021, disgorgement 2025.
Organoleptic characteristics:
An aristocratic sparkling wine right from its colour, which shows a beautiful shade of bright rose petal in the glass, the nose opens with fragrant hints of small red fruits such as wild strawberry and blackberry, red apple and a floral, fragrant and spicy breath. The Pinot rages with raspberries, roses, black pepper and gooseberries. Everything is impeccably declined, with almost punctiliousness. The yeasts are tasty, creamy in their pastry aromas. Excellent persistence and hints of Dolomite granite give credibility to a luminous olfactory picture. In the mouth, it does not hide its great savoury charge, the freshness taking on the flavour of berries and mint. It moves sharply, then accelerates with an astonishing sapidity and flows into a long finish where the phrasing between bread crust, rocks, citrus and saline suggestions paint a splendid fresco. Balanced, drinkable, irresistible and never rude in its minerality.
Storage time:
2-7 years
Vinification
Fermentation of the two varieties takes place separately, using steel tanks, and only after a few months of ageing is the final blend created. The Pinot Noir provides the cuvée with structure, freshness and aromatic richness and the Chardonnay contributes a touch of refined elegance. Refermentation and second fermentation take place in the bottle, with a minimum maturation period on the lees of 36 months before dégorgement. Harvest 2021, disgorgement 2025.
