Led by brothers Paolo and Giorgio Polegato, Astoria Wines is among the top representatives of the art of Prosecco. Founded in 1987 from the passion of a historic family of winemakers, Astoria is today the first private winemaker of Conegliano-Valdobbiadene DOCG and its wines have been celebrated by the most important wine competitions. Tenuta Val del Brun is the beating heart of Astoria: forty hectares of vineyards immersed in the scenic Prosecco Hills, a unique landscape recognized as a World Heritage Site by Unesco in 2019 that the winery protects also through the adhesion to the Vignes fleuries protocol (2014) and the SQNPI certification (Sistema di Qualità Nazionale Produzione Integrata, 2018).
Description
Velére Prosecco Extra Dry Rosé DOC by Astoria is an excellent rosé sparkling wine with a characteristic taste, pleasingly thick and balanced. Velére is the new gem of the Venice Collection. From the union of Glera and Pinot Noir, comes a new bubble with a delicate color and a strong character. A tribute to the artisans who dedicated their art to the production of sails for the galleys of the Serenissima Republic.

Vinification
Primary fermentation takes place in steel tanks at 18°C with selected autochthonous yeasts. The part of red grapes vinified separately and with short maceration, gives the wine that color and that typical timbre, so sought after by "classic" sparkling wine makers, made of a particular aroma and body. The new wine is kept on the "noble lees" for one month, then filtered and racked into the autoclaves for the "presa di spuma". Refermentation takes place at 18°C with selected yeasts and lasts about 20/25 days.
