Cantina Pasetti's history goes back 5 generations, it began in the Bourbon era and it is still going on today. The turning point for the company came in the 60's, with the beginning of winemaking on its own: the result was extremely positive and the company managed to make a name for itself by increasing its turnover and customers. In the 1980's it will be Mimmo Pasetti, by now studying enology, to give the winery the push to dare and bottle his Montepulciano: he will do it to celebrate the birth of his daughter Francesca, a little girl with red hair just like her father Franco's mother, Donna Rachele. This is how Testarossa was born, the symbol of the winery and of the family, which for 5 generations has been carrying on the work of viticulture with the same passion and determination. Mimmo Pasetti today runs the winery and he is a visionary entrepreneur: his project started at the beginning of the new millennium, when he started buying the first lands in Pescosansonesco, in the heart of Gran Sasso and Monti della Laga National Park. Pescosansonesco's soil, clayey-calcareous and rich in skeleton, is perfect for the cultivation of Montepulciano d'Abruzzo; moreover, the important temperature range between day and night in this place at 550 meters above sea level allow the wine to have a sensorial profile of extraordinary elegance and quality. Therefore began the process of reconversion from the coastal area to the piedmont area, which will continue with the acquisition of other lands in Capestrano, Castiglione a Casauria and Ofena: the choice of producing in these places makes Pasetti winery the only one in Italy that can still boast the logo of the National Park on its bottles. Today Mimmo manages the company together with his three children who have divided the work: Francesca Rachele is in charge of administration, Massimo is in charge of export and international visibility and Davide is an enologist and is in charge of wine production.

Description

Complex and refined, this wine is born from the selection of our best pecorino grapes and is enriched in its structure thanks to the particular vinification technique, which sees it resting for several months on the lees.

Organoleptic characteristics: 

Straw yellow color. The bouquet explodes with hints of melon, dried yellow flowers and bread crust. The aromatic complexity is highlighted by a marked minerality, great structure and long persistence.

Vinification 

In white: press-destemming, soft pressing and subsequent static decantation. Fermentation in steel tanks with selected yeasts at low temperature 14 - 16 °C
