The PaoloLeo winery is divided into two wine cellars, the first is located in the heart of Salice Salentino DOC (San donaci) the second, inaugurated in'August 2020, is located at the gates of Primitivo di Manduria DOC (Monteparano). The winery is flanked by the agricultural one, which has more than 70 hectares and a very old 16th-century farmhouse surrounded by vineyards. Paolo Leo, born in 1960, was born into a family where making wine was an inevitable inheritance; And today it is still an heir, the eponymous Paolo Leo, Nicola's son, who leads the new winery, together with his wife Roberta and sons Nicola, Stefano, Francesco and Alessandro, flanked by loyal collaborators. For years present on the Apulian and international market, it has always operated with respect for the environment and its territory rich in tradition and history. Vines are grown on predominantly calcareous clay soils, with more sandy areas and others with emerging rock , with a mild climate that have made Salento, a fertile sub-region of the Puglia region that bases its economy on agriculture.

Description

A white grape variety grown in the hills of the Itria Valley, Bianco D'Alessano is one of the labels in the Alture line created to enhance minor indigenous grape varieties. Alture was created, in collaboration with winemaker Lino Carparelli, to enhance Puglia's minor indigenous grape varieties grown in the high hills. Despite being a grape variety with great personality, it is little cultivated because of its susceptibility to vine diseases. It has a consistent, balanced taste with good acidity and exotic fruit sensations. The Alture line takes its name from its places of origin, highlands precisely between 350 and 380 meters from the height located in the Itria Valley.
The Corona award given to Valle d'Itria IGP Bianco d'Alessano Alture 2020 by Cantine Paololeo constitutes a great satisfaction, as well as confirmation of the work done by Cantine Paololeo in the revaluation of the uniqueness of these historic minor grape varieties.

Organoleptic characteristics: 

Straw-yellow color with versolini highlights. The nose shows delicate floral and white fruit aromas, including pear and peach. The sip shows good structure, well balanced with the right freshness; pleasant, long and fruity finish

Storage time: 

2-3 years

Vinification 

Harvested in boxes, the grapes are allowed to stand overnight in a cold room at subzero temperatures (20-hour pellicular cryomaceration). The grapes are then destemmed; this is followed by crushing, a short cold maceration and subsequent soft pressing of the pomace. Low-temperature fermentation preserves aromas and freshness
