Cellar
Cantine Barsento is a winery founded in 1969 that has always been founded on the promotion of quality wines from the Nocese countryside alone. What makes this winery so special and unique is certainly the approximately 1,000 square metres of underground cellar dug into the limestone rock and 15 metres deep, with its tunnels and perfectly organised cells that contain true and precious treasures of our winemaking tradition. The function of the underground cellar is to obtain a wine aged in the rock cellar, ensuring that there is precise control of temperature and humidity. The indigenous grape varieties are Primitivo, Malvasia and Negramaro, for the red wines, Verdeca and Fiano; varieties chosen for their expression of territoriality, authenticity and specificity and whose quality is further sublimated through an exclusively manual harvesting process. Even the choice of labels is not left to chance, such as the W'Heart wines that are the result of an innovative communication project in the world of wine: more than 60 special talking artist labels for bottles of white, rosé, red and sparkling white wine. Each one created by Apulian digital artist Claudio Castellana
Description
Paturno is undoubtedly one of the most important wines produced by the Barsento winery, a lively interpretation of the two representative vines of Apulia, Primitivo and Negroamaro, and is distinguished by its characteristic and original organoleptic profile with the right sugar and alcohol content and good fixed acidity, which helps to enhance its aromas and maintain them over time.
Organoleptic characteristics:
Dark ruby red colour with violet hues
The nose is intense, vinous and fruity with hints of blueberries, sour cherries, wild strawberries and balsamic notes.
On the palate it reveals a nice roundness and splendid tannicity.
Storage time:
2-5 years
Vinification
The two wines are vinified separately with maceration lasting 10-12 days in 45 quintal steel vats at a controlled temperature of 25° C, with frequent pumping over to extract the aromatic and colouring substances and at the same time soften the tannic mass.
