Brigaldara is the viticultural treasure chest that encompasses the different souls of Valpolicella. One thousand years of history, one hundred and twenty hectares of property of which forty-seven are planted with vines, distributed in three different areas of the province of Verona: Valpolicella Classica, Valpantena and Valpolicella Orientale. A historic family, the Cesari, who have owned it since 1928, committed to the enhancement of a rich and heterogeneous estate's viticultural heritage. A team of young oenologists and agronomists dedicated to the study and personalization of each intervention in the vineyard, to enhance the varietal expression of the terroirs and micro-terroirs that make up the different souls of the wines produced here. In the winery's vineyards, the attention to safeguarding the environment and reducing the impact of cultivation is extreme: targeted fertilization and only with manure, chemical interventions linked exclusively to the presence of the moth, use of only copper and sulfur as phytopharmaceuticals, and a continuous search for sustainable agriculture.

Il Valpolicella Ripasso Il Vegro nasce dalla rifermentazione delle vinacce di Amarone della Valpolicella. Un Valpolicella d’annata, che viene messo a contatto con le vinacce d’Amarone della Valpolicella ancora ricche di zuccheri, in grado di dare inizio ad una nuova fermentazione. La rifermentazione sulle vinacce, detta appunto ripasso, è un processo lento che arricchisce la struttura del vino e dona caratteristiche note d’appassimento.
Rifermentazione del Valpolicella d’annata sulle vinacce d’Amarone della Valpolicella per circa 5 giorni, con brevi rimontaggi per mantenere bagnato il cappello.
