Brigaldara is the wine treasure chest that encapsulates the different souls of Valpolicella. A thousand years of history, one hundred and twenty hectares of property of which forty-seven are under vine, distributed in three different areas of the province of Verona: Valpolicella Classica, Valpantena and Valpolicella Orientale. A historic family, the Cesari, who have owned it since 1928, committed to the enhancement of a rich and heterogeneous wine-growing heritage. A team of young oenologists and agronomists dedicated to the study and personalisation of each intervention in the vineyard, to enhance the varietal expression of the terroirs and micro-terroirs that make up the different souls of the wines produced here. In the winery's vineyards, attention to safeguarding the environment and reducing the impact of cultivation is extreme: targeted fertilisation with manure only, chemical interventions linked exclusively to the presence of the moth, use of only copper and sulphur as phytopharmaceuticals, and continuous research into sustainable agriculture.
Description
Valpolicella Ripasso Il Vegro comes from the re-fermentation of the marc of Amarone della Valpolicella. A vintage Valpolicella is placed in contact with the Amarone della Valpolicella marc that is still rich in sugars, capable of initiating a new fermentation. The re-fermentation on the marc, known as ripasso, is a slow process that enriches the structure of the wine and gives it characteristic withering notes.
Organoleptic characteristics:
Brilliant ruby red colour. The nose expresses ample and complex aromas, capable of expressing slight hints of ripe and dried fruit that evolve further during ageing, spicy and woody notes, marzipan and exotic flowers with a slight saline nuance. The sip reveals a Valpolicella of surprising structure, juicy and enveloping, perfectly balanced between nose and mouth, with a marked acidity that keeps the aromas of red fruit and spices intact and with soft tannins; long persistent finish.

Vinification
Re-fermentation of vintage Valpolicella on Amarone della Valpolicella marc for about 5 days, with brief pumping over to keep the cap wet.
