Brigaldara is the wine treasure chest that encapsulates the different souls of Valpolicella. A thousand years of history, one hundred and twenty hectares of property of which forty-seven are under vine, distributed in three different areas of the province of Verona: Valpolicella Classica, Valpantena and Valpolicella Orientale. A historic family, the Cesari, who have owned it since 1928, committed to the enhancement of a rich and heterogeneous wine-growing heritage. A team of young oenologists and agronomists dedicated to the study and personalisation of each intervention in the vineyard, to enhance the varietal expression of the terroirs and micro-terroirs that make up the different souls of the wines produced here. In the winery's vineyards, attention to safeguarding the environment and reducing the impact of cultivation is extreme: targeted fertilisation with manure only, chemical interventions linked exclusively to the presence of the moth, use of only copper and sulphur as phytopharmaceuticals, and continuous research into sustainable agriculture.
Description
Valpolicella Superiore Case Vecie is produced from the vinification of fresh grapes, mainly Corvina and Corvinone. It takes its name from the vineyard of the same name in Grezzana, where the ripening of the grapes is subject to significant temperature swings between day and night: a climatic characteristic that gives the wine a particular spiciness on the nose and a totally unique polyphenolic profile. In the mouth, the acidity denotes an important structure, the result of grape selection and vinification techniques aimed at extracting only the noblest component from the skin. A Valpolicella capable of bringing together good body, structure and excellent drinkability, revealing the sensory complexity resulting from the slow ripening of the grapes.
Organoleptic characteristics:
Brilliant ruby red with hints of cherry, balsamic notes of vanilla and spices. Smooth flavour with good structure. It is a full-bodied wine with a medium alcohol content.
Storage time:

Vinification
Selection of grapes in the vineyard harvested in 200 kg crates. Red vinification ensures skin contact throughout the entire fermentation process and colour extraction is guaranteed by 2 daily pumpings over and a mid-fermentation delestage. The temperature during the entire fermentation process is maintained at around 22°-24° to favour the preservation of the delicate, fresh aromas.
