Valentina Passalacqua is an organic farm located in northern Apulia, on the slopes of the famous Gargano National Park. The farm cultivates as many as 80 hectares following the biodynamic philosophy, partly espalier or sapling, and there it produces Negroamaro, Primitivo, Aleatico, Nero di Troia, Bombino, Fiano Minutolo, Falanghina, Greco, Montepulciano, Pinot grigio and Chardonnay divided into three collections. The winery's goal has always been the enhancement of native grape varieties, cultivated and vinified with natural methods, and especially Bombino and Nero di Troia.
Description
Serenity by Valentina Passalacqua is an Apulian white wine made from bombino grapes. It is a natural, unfiltered wine with a 6-day spontaneous fermentation. It is a fresh and mineral wine typical of Bombino with a fruity finish.
Organoleptic characteristics:
It has a straw yellow color. The nose has notes of Mediterranean scrub hay and medicinal herbs. On the palate fresh and mineral typical of Bombino with a fruity finish.

2-3 years

Spontaneous fermentation in steel with 6 days of skin contact. Unfiltered. No temperature control.
