The company's origin and evolution is closely linked to the history of the Bonollo family, which was already experimenting with the centuries-old art of making grappa in the Vicenza foothills of the Alps out of passion in the second half of the 19th century. The earliest evidence of the professional activity of distillers dates back to 1908: the year to which the oldest production report of which we have a copy dates and which refers to Giuseppe Bonollo, the progenitor of the most important dynasty of grappa producers in existence today. In 1995 the fourth generation joined the company, promoting research and development to perfect the Bonollo Unique System: more than 170 years of distilling experience supplemented by the most advanced technology to obtain distillates that stand out for their undisputed quality. In 2016 the company is awarded in Montecitorio as "Italian Excellence," the prestigious prize given to 100 Italian Made in Italy companies distinguished for quality, creativity and excellence. La Freund, Ballor & C.IA fu fondata a Torino nel 1856 da Paul Ballor, Henry Freund ed Emilie Roussette. A fine ‘800 i liquoristi piemontesi godevano di fama internazionale grazie al periodo d’oro del Vermouth e i 3 amici, facendo proprio questo entusiasmo, crearono una delle aziende più all’avanguardia dell’epoca che velocemente acquisì notorietà . La famiglia Bonollo di Padova, famosa nel mondo per prodotti come Grappa OF Amarone Barrique, presenta il rilancio di Ballor, tra i brand più iconici e storici nel mondo del buon bere italiano. Per la produzione del Gin si utilizza solo Ginepro italiano arricchito da botaniche naturali, come da antica ricetta di casa Ballor, il Gin di Emilie conquista per il gusto fresco e vivace. dato da scorze di arancio, bergamotto, mandarino e pompelmo rosa oltre timo e basilico.
Organoleptic characteristics:
Incolore, trasparente e cristallino. Al naso è profumato, agrumato ed erbaceo. Al sorso ritoviamo le note amaricanti date dal ginepro, quelle agrumate date da Arancia Amara Siciliana, Bergamotto Calabrese e Pompelmo Rosa e infine le note balsamiche, erbacee del timo e basilico.

Vinification
Macerazione statica: le bacche di ginepro vengono infuse in una soluzione alcolica per il giusto tempo al fine di estrarre la migliore aromaticità ;
Distillazione: l’infuso viene distillato in alambicco, concentrando le componenti più aromatiche e balsamiche;
