Dom Pierre Pérignon, considered to be the founding father of the world's most famous bubbles, synonymous with luxury and perfection; a young Benedictine monk who in 1668 was appointed cellarer of Hautvillers Abbey, overlooking the Champagne vineyards: his passion for oenological excellence drove him to want to create the 'best wine in the world' to serve his community and the glory of God.Each bottle is an authentic act of creation, made from the best Pinot Noir and Chardonnay grapes of a single harvest, in percentages that vary from year to year, between a 50/50 and a 60/40 in favour of one of the two.Dom Pérignon's ambition is to pay homage to each vintage, whatever the challenges. Dom Pérignon dares to put itself on the line, to take risks, even going so far as to abandon the creation of the Millesimato when the vintage is not up to scratch. A Millesimato Dom Pérignon expresses itself fully in its three dimensions: L'vintage: the character of the seasons I Plénitude: the evolution through successive expressions thanks to a long maturation on the lees. Description

Maison synonymous with prestige, luxury and elegance. This Dom Pérignon Vintage 2013 is produced from a secret blend of chardonnay and pinot noir, and is made with an extremely rigorous selection of the best grapes. Depending on the quality of the vintage, Dom Pérignon chooses to declare the vintage or not. In line with his ideals, Dom Pérignon Vintage champagne is revealed after more than 8 years of elaboration and resting in the cellar. The 2013 vintage was a vintage that reveals an ideal balance between acidity and roundness and a beautiful aromatic richness. The summer was hot and dry, with the greatest number of hours of sunshine in the Champagne region, thus favouring a regular and progressive development of the grapes. The rains recorded at the beginning of September and the east wind helped to preserve the health of the vineyard.

Organoleptic characteristics: 

Brilliant straw yellow colour with very fine perlage. The nose is delicate and surprises with its richness and complexity. The fragrances of eucalyptus, mint and vetiver combine harmoniously with fruity notes of mirabelle plum, apricot, orange blossom, spicy notes (pepper, cardamom, liquorice stick) as well as hints of iodine and roasted notes, coffee powder. On the palate we find an unctuous and airy entry preceding an elegant, precise and silky mouthfeel to a saline and persistent finish.

Vinification 

Dom Perignon is produced in vintages and only in the best years. For this Vintage, the vinification process took place in steel, with a second fermentation in the bottle where the wine was matured on the lees for a minimum of 90 months.
