This Dom Pérignon Vintage 2013 is made from a secret blend of chardonnay and pinot noir, it is made with an extremely rigorous selection of the best grapes. Depending on the quality of the vintage, Dom Pérignon chooses to declare the vintage or not. In keeping with his ideals, Dom Pérignon Vintage champagne is revealed after more than 8 years of elaboration and cellar rest. The 2013 vintage was a vintage that reveals an ideal balance between acidity and roundness and a beautiful aromatic richness. The summer was hot and dry, with the most hours of sunshine in the Champagne region, thus favoring a smooth and progressive development of the grapes. The rains recorded in early September and the east wind helped to preserve the health of the vineyard.

Organoleptic characteristics: 

Brilliant straw yellow color with very fine perlage. Delicate on the nose, it surprises with its richness and complexity. Fragrances of eucalyptus, mint and vetiver combine harmoniously with fruity notes of mirabelle plum, apricot, orange blossom, spicy notes (pepper, cardamom, licorice stick) but also hints of iodine and roasted notes, coffee powder. On the sip we find an unctuous and airy entry precedes an elegant, precise and silky mouthfeel to a saline and persistent finish.

Vinification 

Dom Perignon is made in vintages and only in the best vintages. For this Vintage, the winemaking process took place in steel, with second fermentation in the bottle where aging on the lees took place for a minimum of 90 months
