Dom Pierre Pérignon, considered to be the founding father of the world's most famous bubbles, synonymous with luxury and perfection; a young Benedictine monk who in 1668 was appointed cellarer of Hautvillers Abbey, overlooking the Champagne vineyards: his passion for oenological excellence drove him to want to create the 'best wine in the world' to serve his community and the glory of God.Each bottle is an authentic act of creation, made from the best Pinot Noir and Chardonnay grapes of a single harvest, in percentages that vary from year to year, between a 50/50 and a 60/40 in favour of one of the two.Dom Pérignon's ambition is to pay homage to each vintage, whatever the challenges. Description

Maison synonymous with prestige, luxury and elegance. This Dom Pérignon rosé Vintage 2009 is produced from a secret blend of chardonnay and pinot noir, and is made with an extremely rigorous selection of the best grapes. It is a radiant champagne, the fruit appears in all its majesty, round, rich and generous. The wine shows all the aromatic nuances of the Pinot Noir raspberry, fig, strawberry, cherry, amplified by the delicacy, mineral elegance and crystalline notes of the Chardonnay.

Organoleptic characteristics: 

It has a pink colour with amber highlights. The nose presents fleeting aromas of rose, orange oil and saffron, the bouquet becomes warmer, dominated by raspberry and cherry red fruits and dark notes of cassis and fig. At the end, sweetness triumphs, with notes of gingerbread and liquorice. In the mouth it is majestic, ripe, fleshy and deep. After an initial sensation of softness and roundness, the wine opens up in the heart of the palate, settling like an intimate caress. The power is restrained and the dominant impression is consistency. The savoury sensations converge and persist, leaving the memory of their tactile imprint.

Vinification 

Dom Perignon is produced in vintages and only in the best years. For this Vintage, the vinification process took place in steel, with a second fermentation in the bottle where the wine was matured on the lees for a minimum of 90 months.
